Cooking

Banana Cherry Muffin

1 cup oil
1 cup sugar
1 cup brown sugar
4 eggs
6 bananas, mashed
1 cup flour
1 cup granola or leftover cereal that has been ground in food processor

2 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon vanilla
sprinkle of ground ginger

1/2 cup cherries, fresh or frozen ground in food processor

Preheat oven to 350 degrees.

Mix ingredients into a large bowl in the order they are listed, stirring well as each one is introduced.

Spoon batter into baking cups and bake until a knife or toothpick comes out clean. (About 22 minutes.)

This recipe makes about 2 dozen moist muffins. Warning: This muffins are somewhat heavy, and they do not bake up with a rounded top. They are, however, very moist.
