"I just finished Tori Spelling's sTori Telling...and IT"S GREAT!

I indulge in regular tabloid reading, I admit it. Do I think sometimes those magazines go to far? You bet!

But people who in the show business world often come naturally to some sparkle or possess something t -- just by their choice of career -- that make me want to watch then. The situations they get into are just a little 'amplified' somehow.

Tori does a great job of reminding readers that every tabloid target has a lot more to their story than the picture on the magazine's cover. She's funny, real, sweetly imperfect...and a gal just trying to make her life be what she wants it to be.

Lettuce Tuna Wraps

1 head lettuce
1 tomato, chopped
2 cans of tuna, 6-oz each
1/3 cup red grapes, chopped
1/3 cup green apples, chopped
2 Tbs chickpeas, blended into puree
2 Tbs onions, finely chopped
1 Tbs basil
1 Tbs Olive oil
1 Tbs sesame seeds

1/2 teaspoon pepper

Wash and slice lettuce so it creates a "cup" shape for each serving.

In a large glass bowl, combine all the ingredients listed above. Mixing well as each is added.

Once well blended, spoon tuna mixture into lettuce cups and serve.

Side Note:

This recipe uses canned white beans, which are loaded with fiber. According to various research, this element helps protect against stomach and colon cancers and may have some benefits in reducing the risk of breast cancer is some women.

Many regular tuna wrap recipes of this type just toss in the chickpeas. By using the pureed texture and relatively small amount in this recipe...our chef is able to help members of her family receive a tiny nutritional benefit...even though several may have an aversion to chickpeas. This method also negates the need for yogurt or mayonnaise in this recipe.
